Shiitake cultivation is popular throughout Gifu Prefecture, particularly during the agricultural off-season from autumn to winter. Mushrooms grown on artificial cultivation logs within the prefecture are marketed under the name Yamakkō.
Hida Yamakkō is especially appreciated for its substantial thickness, juicy texture, and pleasant chewiness. Its good keeping quality is another reason it has earned support from consumers.
These mushrooms offer more than just flavor. Their appealing appearance and substantial texture make them a versatile ingredient for a variety of dishes, including grilled mushrooms, soups, and hot pots. Their natural umami also enhances the flavor of other ingredients.
Hida Yamakkō has earned a strong reputation across Japan as a distinctive regional food, reflecting the care taken in cultivating shiitake mushrooms in the Hida area.
