Zangi (Deep-Fried Chicken)

Hokkaido’s Soul Food with a Unique Name

Zangi is Hokkaido’s distinctive take on Japanese fried chicken and is widely regarded as one of the region’s beloved soul foods. Although it resembles ordinary Japanese karaage, Zangi is typically characterized by stronger seasoning and a deeper savory flavor.

The dish is generally made by marinating chicken in a soy sauce-based mixture before frying it. Common ingredients in the marinade include soy sauce, ginger, garlic, sake and egg, although recipes vary considerably from one household or restaurant to another. The seasoned chicken is coated with wheat flour, potato starch, or a combination of the two before being deep-fried.

Born in Kushiro

Zangi is said to have originated in Kushiro, eastern Hokkaido. Around 1960, the restaurant Torimatsu in Kushiro is said to have served an early version of the dish under the name “Zaagi.” From there, the style gradually spread throughout Hokkaido and developed into the regional specialty known today as Zangi.

There are many theories about the origin of the name. One widely cited theory connects it to the Chinese word zhà jī (炸鶏), meaning fried chicken. The unusual name has since become an inseparable part of Hokkaido’s food culture.

Every Restaurant Has Its Own Recipe

There is no single recipe for Zangi. Families and restaurants use their own marinades and cooking methods, resulting in a remarkable variety of flavors. Some versions are intensely savory and garlicky, while others emphasize sweetness, ginger or the aroma of sake.

Zangi can be prepared with either bone-in or boneless chicken, although boneless Zangi is especially common in Hokkaido. Some people enjoy the freshly fried chicken as it is, while others dip it into an additional sauce for an extra layer of flavor.

More Than Just Chicken

The word Zangi is not limited to chicken. Other ingredients can be prepared in a similar style and given the name Zangi. For example, ika zangi is fried squid, while tako zangi is fried octopus.

This flexible approach reflects the creativity of Hokkaido’s local food culture, where abundant seafood and other regional ingredients are transformed into familiar comfort foods.

Try Zangi as a Hearty Rice Bowl

Zangi is often enjoyed on its own as a main dish or shared food at restaurants and izakaya pubs. It can also be served over rice as a Zangi-don, creating a hearty bowl topped with generously portioned pieces of seasoned fried chicken.

For visitors traveling through Kushiro and eastern Hokkaido, Zangi is an excellent introduction to the region’s casual food culture. Crispy on the outside, juicy inside and packed with savory flavor, this uniquely Hokkaido fried chicken is a local favorite that is easy to enjoy and hard to forget.
