Teppō-jiru

A Rich Miso Soup Filled with the Flavor of Hanasaki Crab

Teppō-jiru is a traditional soup from the Nemuro area of eastern Hokkaido, made by simmering crab in miso soup. The dish is especially associated with Hanasaki crab, a prized local crab known for its thick legs, generous meat, and rich, juicy flavor.

Even when simmered in soup, Hanasaki crab releases an exceptionally rich stock, filling the broth with the deep taste of the sea. The result is a warming, savory miso soup in which the crab itself is the star.

A Local Specialty Rooted in Nemuro’s Fishing Culture

In eastern Hokkaido, particularly around Nemuro, crab-based miso soup has long been known as Teppō-jiru. It is said to have been enjoyed by local fishermen as a hearty dish made with the abundant seafood of the surrounding waters.

The name Teppō-jiru, literally “gun soup,” is thought to come from the way diners use chopsticks to poke into pieces of crab leg and pull out the meat. This action was traditionally compared to loading a bullet into an old-fashioned firearm.

Hanasaki Crab: A Rare Treasure of Nemuro

One of the most famous ingredients for Teppō-jiru is Hanasaki crab, landed in the waters around Nemuro. Although it is called a crab, it is biologically a close relative of the king crab and belongs to the hermit crab group.

Hanasaki crab is prized for its firm, succulent meat and distinctive flavor. Its fishing season is limited, traditionally running from June through September, while catches have declined in recent years, making this local seafood particularly precious.

The crab has a dark brownish color when raw, but turns a vivid vermilion red when boiled. Its body and legs are also covered with prominent spines, giving it a distinctive appearance.

A Simple Recipe That Brings Out the Crab’s Natural Flavor

The basic preparation of Teppō-jiru is wonderfully simple. Crab pieces and vegetables are simmered in a kombu-based broth, followed by miso, tofu, and green onions. The natural stock released by the crab is the key to the soup’s rich and satisfying flavor.

The vegetables vary from household to household. Green onions and daikon radish are common choices, while some versions contain no vegetables at all, allowing the crab’s natural sweetness and umami to dominate the broth.

More Than Just Hanasaki Crab

Although Hanasaki crab is particularly associated with Nemuro-style Teppō-jiru, other Hokkaido crabs can also be used. Horsehair crab, king crab, and snow crab are among the varieties that may be simmered in this traditional soup.

Originally enjoyed mainly during the summer-to-autumn Hanasaki crab season, Teppō-jiru can now be prepared throughout the year using frozen crab or other varieties available in different seasons. This has made it possible to enjoy the comforting dish even outside the traditional fishing season.

A Taste of Eastern Hokkaido

Teppō-jiru is more than a simple bowl of miso soup. It reflects the close relationship between the people of eastern Hokkaido and the rich waters of the Nemuro region. The combination of local crab, kombu, miso, and simple seasonal ingredients creates a deeply satisfying taste of the area’s fishing culture.

For travelers exploring Nemuro and eastern Hokkaido, a bowl of Teppō-jiru is an excellent way to experience the region’s seafood at its most comforting and authentic.
