Milk Jam from Tokachi Shinmura Farm is a simple yet richly flavored spread made by slowly concentrating fresh milk until its natural sweetness and creamy character become wonderfully intense. Originally a traditional preserved food made in rural areas of France, milk jam was introduced as a domestic dairy product in Japan by Tokachi Shinmura Farm in 2000.
The ingredients are remarkably simple: fresh milk produced at the farm and granulated sugar from Hokkaido. No additives or preservatives are used.
The milk and sugar are slowly simmered in a dedicated kettle until the volume has been reduced to about one-third of its original amount. This gradual cooking process concentrates the natural flavor of the milk while creating a smooth, creamy consistency.
Tokachi Shinmura Farm has worked for years to improve the environment in which its cows are raised and to develop healthier pasture. The farm eventually adopted a 100% pasture-based system, allowing its cows to spend their time in a spacious natural environment and graze on carefully nurtured grass.
The flavor of the milk can change with the seasons, reflecting the grasses and natural conditions available to the cows. The farm places great importance on preserving these natural characteristics rather than masking them.
Milk Jam was created from the farm’s belief that simplicity is important. Only freshly milked farm milk and Tokachi-produced granulated sugar are used in the basic recipe.
Production is deliberately kept small, with only three jars made at a time. From milking the cows through cooking and filling the jars, the entire process is carried out by hand.
Open a jar and you will find a softly colored, milk-white spread with a gentle aroma. Its flavor is rich and creamy yet pleasantly clean on the finish, allowing the natural sweetness of the milk to remain at the center.
The farm also produces a variety of flavors, including the smooth Plain version and Vanilla, generously blended with fragrant Madagascar vanilla beans. Around ten varieties are available, offering different ways to enjoy the concentrated richness of milk.
Tokachi Shinmura Farm’s Milk Jam captures the simple flavors of the Tokachi countryside in a single jar. Made from fresh farm milk and sugar and carefully simmered by hand, it is a distinctive Hokkaido specialty for anyone who wants to experience the region’s dairy culture in a deliciously simple form.
