Memuro burdock root is a flavorful agricultural specialty from Memuro Town in Hokkaido’s Tokachi region. It is grown in deep, soft soil that allows the long roots to develop straight and evenly, producing burdock with a rich aroma and satisfying texture.
Burdock has an unusually long shape and requires nearly one meter of deep, workable soil to grow well. Producing roots that are consistently thick and straight is difficult because fields commonly contain stones or layers of hard clay beneath the surface.
Memuro is fortunate to have many fields where soft soil extends deep into the lower layers. This creates an ideal environment for cultivating burdock with a thick, straight shape that remains uniform all the way to the tip.
Local growers have worked for many years to make the most of Memuro’s favorable soil conditions. Centered around the Memuro Town Burdock Producers’ Association, they have conducted research and refined cultivation methods to produce high-quality burdock consistently.
The result is burdock that grows straight and evenly, while retaining the distinctive earthy aroma and rich flavor for which this root vegetable is valued.
Burdock is well known for being rich in dietary fiber. Memuro burdock also has a pronounced natural fragrance and flavor, making it a versatile ingredient in Japanese cooking.
Harvesting begins from around late August and continues into autumn. The roots can then be enjoyed in a variety of traditional dishes, allowing visitors to experience one of the agricultural specialties created by the fertile plains and distinctive climate of Tokachi.
