Kushiro Soba

A Unique Kushiro Specialty with Chlorella

Kushiro soba is a distinctive local style of Japanese buckwheat noodles that has been enjoyed in Kushiro, eastern Hokkaido, since the Meiji period (1868–1912). Its most recognizable feature is its vivid green color, created by adding chlorella to the soba dough.

Chlorella is a type of freshwater green microalgae known for its nutritional content. Its addition gives Kushiro soba its characteristic green appearance and makes the noodles especially eye-catching. The bright color also gives the dish a refreshing feel, making it particularly appealing during the warmer months.

The Soba Culture of Kushiro

Kushiro has developed a distinctive soba culture over many generations. Many soba restaurants in the city belong to the Azumaya family, a network of establishments that developed from Chikurōen Azumaya Honten, one of Kushiro’s historic soba restaurants.

Although these restaurants share a common heritage, each establishment has developed its own character, menu and style. Local residents often have a favorite shop and return regularly, making soba an important part of everyday food culture in Kushiro.

A Bright Green Bowl of Hokkaido Soba

The vivid green noodles make Kushiro soba immediately different from the more familiar brown or gray soba commonly seen elsewhere in Japan. The striking appearance is part of its appeal, but the dish is also deeply connected to the local dining culture of Kushiro.

For visitors exploring eastern Hokkaido, trying Kushiro soba is a simple way to experience a regional food tradition that has been shaped by the city’s long history. Enjoying a bowl at one of the local soba restaurants offers not only a taste of the noodles themselves, but also a glimpse into the everyday culinary culture of Kushiro.
