Komagatake Farm Okubo, located in the Komagatake area of Mori Town, Hokkaido, grows its crops using reduced amounts of chemical fertilizers and pesticides. The farm transforms its prized homegrown tomatoes and locally sourced Hokkaido ingredients into a distinctive tomato sauce made without chemical flavor enhancers or additives.
Great care goes into every stage of production, from cultivating tomato varieties suited to sauce-making to using pork to add richness and depth of flavor in place of artificial additives. The result is a flavorful sauce that has earned a favorable reputation among local customers for its commitment to quality and taste.
Two varieties are available: Garlic, with the inviting aromas of garlic and basil, and Chili, which features the distinctive heat of habanero peppers grown by the farm itself.
This variety is made with Sicilian Rouge tomatoes, a variety particularly well suited to cooking and naturally rich in glutamic acid, which contributes to umami. The farm uses only tomatoes grown on its own fields through microbial farming methods, with organic fertilizers and no pesticides.
No additives are used in the sauce. Instead, pork is added to create a deep, satisfying flavor. Generous quantities of onions are slowly simmered with the tomatoes, giving the sauce a distinctive natural sweetness. Subtle notes of garlic and basil unfold with every bite, complementing the rich tomato flavor.
Made with the same Sicilian Rouge tomatoes as the Garlic variety, this sauce features chili peppers cultivated by the farm to bring out a lively, spicy character.
Its flavor begins with a pleasant sweetness before developing into a distinctive heat that keeps you coming back for more. It is especially delicious served with French fries, making it an excellent choice for those who enjoy a spicy twist on a familiar favorite.
