Hokkaido Potatoes

Delicate Sweetness and a Variety of Textures

Hokkaido potatoes are one of the region’s most important agricultural specialties. Thanks to their high starch content and excellent keeping qualities, potatoes have long been an essential part of everyday cooking in Hokkaido.

Hokkaido is also known for the subtle sweetness, satisfying texture, and wide variety of potatoes grown across the island. Different varieties are cultivated to suit different types of cooking, allowing local potatoes to be enjoyed in everything from simple side dishes to hearty Japanese meals.

Different Potatoes for Different Dishes

Danshaku potatoes are known for their fluffy, crumbly texture and are especially well suited to dishes such as flour-coated boiled potatoes and potato salad. Their soft texture makes them a classic choice for traditional home cooking.

May Queen potatoes, by contrast, have a firm, smooth texture that holds its shape well during cooking. They are particularly suitable for simmered dishes such as Japanese curry and nikujaga, a home-style dish of meat and potatoes simmered with vegetables in a savory-sweet sauce.

In addition to these familiar varieties, Hokkaido produces many other types, including Kitaakari, Wase Shiro, and Hokkai Kogane. In total, around 40 varieties are said to be grown in the region, each offering its own characteristics.

Potatoes Grown in Hokkaido’s Distinctive Climate

Tokachi and the Abashiri area are among Hokkaido’s major potato-producing regions. The large difference between daytime and nighttime temperatures helps create favorable growing conditions for potatoes.

The expansive fields of potato plants are also part of Hokkaido’s distinctive summer scenery. When the plants bloom, their white, pale purple, and pink flowers sway across the vast fields, creating a beautiful rural landscape that is characteristic of Japan’s northern island.

A Taste of Hokkaido’s Agricultural Heritage

From fluffy potatoes perfect for salads and side dishes to firm varieties that hold their shape in hearty stews, Hokkaido’s potatoes offer an impressive range of flavors and textures. Trying locally grown potatoes is a simple but rewarding way to experience the island’s rich agricultural culture.
