Ramen Salad

A Refreshing Hokkaido Specialty Combining Ramen and Salad

Ramen Salad is a unique Hokkaido dish that combines chilled ramen noodles with a generous amount of fresh vegetables and salad dressing. Often nicknamed “Rā-Sara” in Japan, it is especially popular in Sapporo and is commonly served at izakaya, casual Japanese pubs.

Although it contains ramen noodles, Ramen Salad is enjoyed more like a salad than a noodle dish. The large quantity of vegetables distinguishes it from Hiyashi Chūka, a traditional Japanese chilled noodle dish. The result is a refreshing and satisfying combination of cool noodles, crisp vegetables, and flavorful dressing.

More Salad Than Ramen

The defining feature of Ramen Salad is its generous portion of vegetables. Lettuce, tomatoes, cucumbers, carrots, and other vegetables may be combined with chilled ramen noodles, creating a colorful and substantial salad.

Many restaurants use their own original dressing, although sesame-based dressings are particularly common. The nutty flavor of sesame pairs especially well with the cool noodles and fresh vegetables.

Unlike ordinary ramen, Ramen Salad is served cold and is generally eaten as a refreshing dish rather than a hot main course. Its combination of noodles and vegetables makes it an easy choice for diners who want something lighter while still enjoying the satisfying texture of ramen.

A Popular Dish in Hokkaido Homes and Schools

Ramen Salad is deeply established in everyday food culture in Hokkaido. It is frequently found on izakaya menus and is also commonly prepared at home. Its popularity extends to schools, where it has become a familiar menu item in elementary and junior high school lunches in Hokkaido.

Before convenient commercial products became widely available, home cooks typically boiled the ramen noodles, chilled them, and mixed them with a dressing similar to the sauce used for Hiyashi Chūka, often together with mayonnaise. Fresh vegetables were then added to complete the dish.

Today, chilled ready-to-use noodle products, dedicated Ramen Salad dressings, and prepared versions sold in supermarket deli sections make it much easier to enjoy this Hokkaido specialty at home.

Born in Sapporo in 1985

Ramen Salad is said to have originated in 1985 at the Big Jug beer hall inside Sapporo Grand Hotel. The restaurant’s head chef came up with the idea of enjoying ramen “like a salad,” creating a new style of dish that quickly attracted attention for its fresh and unusual combination.

The dish became widely popular and helped establish Ramen Salad as one of Hokkaido’s distinctive local foods. Sapporo Grand Hotel later received recognition for its contribution to the spread of Hokkaido cuisine and also collaborated with convenience stores to develop new Ramen Salad products.

Today, commercially produced versions inspired by the original recipe continue to be enjoyed by people throughout Japan, helping this creative Sapporo-born dish reach an even wider audience.

A Refreshing Taste of Sapporo

Ramen Salad is a great example of how Hokkaido’s food culture can turn familiar ingredients into something completely new. Chilled ramen noodles, plenty of fresh vegetables, and a rich sesame-based dressing come together in a dish that is refreshing, filling, and distinctly different from conventional ramen.

For travelers exploring Sapporo, trying Ramen Salad is an easy and delicious way to discover one of the city’s more unexpected local specialties.
