Aguni Salt is a premium Okinawan sea salt made from the exceptionally clear seawater surrounding Aguni Island, a remote island in Okinawa Prefecture. Carefully produced using traditional methods, it captures the natural character of Okinawa’s beautiful seas in a pure and distinctive seasoning.
One of the best-known varieties is kama-daki salt, or kettle-cooked salt. Seawater is first naturally concentrated for more than a week until its salt concentration reaches approximately seven times its original level, or around 20 percent. This concentrated seawater, known as kansui, is then slowly heated in a large flat kettle.
The concentrated seawater is heated over firewood for approximately 30 hours. During this long process, skilled workers continually stir the salt mixture by hand to prevent it from sticking or burning, gradually reducing it until the characteristic crystals of Aguni Salt are formed.
The entire process relies on careful craftsmanship rather than additives or artificial ingredients. This slow, hands-on production is an important part of the character of Aguni Salt.
Aguni Salt is known for its elegant saltiness with a subtle sweetness. Rather than leaving a harsh salty aftertaste, it has a gentle, lingering flavor that allows the natural taste of food to remain clear.
Because of its delicate character, one of the best ways to appreciate Aguni Salt is to start with something simple, such as a salted rice ball. A dish with very few ingredients allows you to experience the difference in aroma, texture, and flavor for yourself.
Aguni Salt is also available as sun-dried salt. Instead of being cooked in a kettle, concentrated seawater is placed in shallow greenhouse pools and allowed to dry naturally under the sun.
The drying process takes approximately 20 days in summer and around 60 days in winter. As the water gradually evaporates, salt crystals form naturally. Sun-dried salt has a subtly different flavor from kettle-cooked salt, and it has developed a devoted following among people who appreciate its distinctive character.
Made from seawater surrounding a remote Okinawan island and carefully finished by hand, Aguni Salt offers more than simple seasoning. Its gentle sweetness, refined saltiness, and subtle differences between production methods make it an excellent way to experience the natural character of Okinawa through food.
For travelers interested in local ingredients and traditional food culture, tasting Aguni Salt with a simple dish is an easy and memorable way to discover one of Okinawa’s carefully crafted island specialties.
