Agu Pork

Okinawa’s Famous Heritage Pork with a Rich, Sweet Flavor

Agu is a traditional Ryukyuan pig native to Okinawa. With its distinctive black coat and appearance somewhat reminiscent of a wild boar, it is also known as Okinawan Black Pig or Island Pig. The pork is prized for its tender texture, gentle sweetness, and rich flavor.

A Traditional Okinawan Pig with a Long History

The exact origins of Agu remain uncertain, but it is widely believed to have descended from pigs brought to the Ryukyu Islands from China during the 14th century, when the Ming dynasty ruled China. These pigs were subsequently raised on the islands and gradually became established as a local breed.

During the turmoil of World War II, the number of Agu pigs declined dramatically, and the breed was once thought to have become extinct. After the war, however, a small surviving population was discovered, and efforts were made to breed the pigs again. Their numbers gradually recovered, although Agu remains relatively rare.

A Rare and Highly Prized Pork

Agu has traditionally been difficult to breed in large numbers. Long-term inbreeding is thought to have contributed to reproductive challenges, including irregular breeding cycles and relatively small litters. Because of its limited availability, Agu has sometimes been described as a “phantom pig”—a rare delicacy that is not easily found outside Okinawa.

The meat is known for its soft texture and relatively mild aroma. It contains a comparatively large amount of fat, while the meat itself has less lean tissue than many conventional pork varieties. The source also notes that its cholesterol level is said to be around one-quarter that of ordinary pigs and that it contains abundant amino acids such as glutamic acid, an important contributor to umami.

From Heritage Breed to Okinawan Brand Pork

Today, pork produced by crossing Agu with other pig breeds is also marketed as Agu brand pork. It is available at supermarkets and is sold as a popular Okinawan specialty and souvenir food.

For visitors exploring Okinawa, tasting Agu pork is a delicious way to discover the island’s long-standing pork culture. Its tender texture, rich umami, and naturally sweet flavor make it especially appealing in traditional Okinawan dishes as well as modern preparations.

Discover the Flavor of Okinawa

From its uncertain origins and near disappearance to its revival as one of Okinawa’s best-known specialty porks, Agu reflects the unique history of the Ryukyu Islands. Sampling this distinctive pork offers travelers an opportunity to experience a regional food tradition that cannot easily be separated from Okinawa’s history and culture.
