Kokyo (Japanese Confectionery)

An Elegant Japanese Sweet Inspired by an Ancient Mirror from Mount Haguro

Kokyo is one of the signature Japanese sweets made by Kimuraya, a long-established confectionery shop in Tsuruoka City, Yamagata Prefecture. The sweet is inspired by an ancient bronze mirror excavated from Kagami-ike Pond on Mount Haguro, one of the Three Sacred Mountains of Dewa.

Its connection to an archaeological discovery gives Kokyo a distinctive historical character. Enjoying this traditional sweet offers visitors a chance to imagine the distant past while experiencing one of Tsuruoka’s local confectionery specialties.

A Delicious Combination of Special Sweet Bean Paste and Gyūhi

Kokyo is made with Kimuraya’s specially prepared sweet red bean paste, a recipe the confectionery has carefully maintained since its founding. Inside the sweet bean paste is a layer of gyūhi mochi, a soft and chewy confection made from glutinous rice.

The smooth sweetness of the bean paste combined with the soft, chewy texture of gyūhi creates a delicate contrast that makes Kokyo particularly enjoyable.

A Unique Contrast of Crisp and Soft Textures

One of Kokyo’s distinctive characteristics is its contrast in texture. The outer layer has a lightly crisp texture, while biting into it reveals soft, moist sweet bean paste and tender gyūhi inside.

This combination of different textures in a single bite is one of the defining pleasures of Kokyo.

A Simple Taste That Highlights the Quality of Its Ingredients

The flavor of Kokyo is deliberately simple, allowing the quality and richness of the sweet bean paste to take center stage. The confection is carefully made to preserve the natural character of its ingredients, offering a refined sweetness and a satisfying bean flavor.

Its understated taste makes it well suited to enjoying slowly with Japanese tea.

A Traditional Sweet to Enjoy Alongside the History of Mount Haguro

Kokyo is more than just a Japanese confection. Its design and name are connected to the history and cultural heritage of Mount Haguro, giving the sweet a story that visitors can appreciate as they explore the Dewa Sanzan region.

When visiting Tsuruoka, Kokyo is a memorable local specialty to try while reflecting on the ancient history and spiritual traditions associated with the Three Sacred Mountains of Dewa.
