Sarufutsu Scallops are highly prized scallops from Sarufutsu Village in northern Hokkaido, where the rich waters of the Sea of Okhotsk provide an ideal environment for producing large, flavorful shellfish.
The Sea of Okhotsk is famous as one of the world’s productive fishing grounds. Ocean currents carry abundant nutrients into the sea, supporting a rich marine ecosystem.
Sarufutsu Village lies along this nutrient-rich coast and has become one of Hokkaido’s best-known scallop-producing areas. The plentiful nutrients allow Sarufutsu Scallops to grow large and develop substantial, thick adductor muscles.
One of the defining characteristics of Sarufutsu Scallops is their thick, satisfying texture. Their large adductor muscles provide a substantial bite, while the natural sweetness of the scallop remains clear and pronounced.
The combination of size, texture, and delicate sweetness makes them a premium example of the seafood produced along Hokkaido’s northern coast.
Sarufutsu Scallops are particularly valued when they have been raised for approximately five years. These carefully matured scallops are considered especially flavorful and are sometimes known as “Natural Five-Year Scallops”.
The name reflects the producers’ commitment to allowing the scallops sufficient time to grow in the nutrient-rich waters of the Sea of Okhotsk, resulting in the generous size and rich flavor for which Sarufutsu is known.
