Hokkaido Lily Bulb - Yurine

Delicate Sweetness with a Fluffy, Slightly Chewy Texture

Yurine, or edible lily bulb, is a distinctive Japanese ingredient, and more than 90% of Japan’s production comes from Hokkaido. It has a delicate natural sweetness and a unique texture that is both fluffy and slightly chewy, making it a prized seasonal ingredient.

Yurine is especially popular in the Kansai region of Japan, where it has traditionally been used in refined seasonal dishes. Its many overlapping scales give the bulb its distinctive appearance and are also associated with the Japanese name “yurine,” which can be interpreted as referring to the coming together of numerous roots or bulb segments.

An Ingredient with Centuries of History

Lily bulbs have been used in Japan since ancient times, originally valued for medicinal purposes. Cultivation began in the 17th century, gradually establishing yurine as an important cultivated food ingredient.

Harvested in Autumn and Enjoyed Through Winter

Yurine is harvested around October, after the first frosts begin. It reaches its peak shipping period in December, when it becomes an important ingredient for New Year’s cuisine in Japan.

Interestingly, yurine develops a sweeter flavor after being stored for around two to three months after harvest. During this time, some of its starch gradually changes into sugar, enhancing its natural sweetness.

From Traditional Dishes to Crispy Fried Yurine

Yurine is commonly used in dishes such as chawanmushi, a delicate savory steamed egg custard, and dishes topped with a thickened savory sauce. Its naturally soft and fluffy texture makes it especially well suited to these gentle cooking methods.

For something a little different, deep-fried yurine is also highly recommended. Frying gives the outside a light, crisp texture while preserving the bulb’s naturally sweet and pleasantly chewy interior.

When to Enjoy Hokkaido Yurine

The main season for Hokkaido yurine is October through March. Its peak around winter and New Year’s makes it a wonderful ingredient for experiencing the seasonal character of traditional Japanese cuisine.
